The key is what you put into the extruder. Making the dough is the tricky part. Let me tell you, we made a half batch of egg noodle pasta dough using the recipe in the user manual. My wife and I worked together; I supplying the final muscle for the hand knead. Do not rush. The dough is do-able because you look at it as it develops. The last, hand knead phase is where it all comes together. We had what looks like satisfactorily constructed pasta dough. We wrapped it in the wax paper and it appearing as a large salt water taffy. Let it rest. Let moisture find its way into every bit of flour that missed your inspection. Let the gluten develop. 10 to 15 minutes. Go have a sip of wine. Think about the wine you're tasting and how well it will accompany the pasta dish with will come from your pasta effort. Extrusion is a piece of cake. My wife wanted Mac and Cheese and is partial to a smoked gouda version. Our first pasta we produces using this extruder was large macaroni. It just plain worked. A half recipe produces about 9ish ounces of macaroni. Thick going into the boiling, salted water. Marvelously al dente as a finished product. Is sum, the extruder works. It "expressed" beautifully smooth and toothsome product. Enjoy!

Quite simply, if you are making a tube-shaped pasta, you are likely getting one good noodle per cut (good meaning open on both ends). The wire drags across the plate, essentially sealing one end of the tube. The noodle that is open on both ends is the one closest to the wire. I tried adding flour to the included recipe, flouring the ball before tossing it in the hopper, slow cut, fast cut, flouring the wire between cuts. I can not be the only person having this issue, yet I can not find a trouble shoot. Is there a trouble shoot for this issue?

So glad I got this, I've wanted one for a while and got it as a gift. So easy to use, fresh pasta is the best! The recipe in the book works well, just make sure to sift the flour.

Another great addition to my stand mixer
Could be easier to clean. But my husband loved me getting this.

I had never made or had home made pasta before but now we will have it often. The first time I made spaghetti and the dough was to wet they all stuck together before I could get them in the pot. But the second time I added a 1/4 cup flour and left out 1 egg and it turned out perfect. Just be sure to make dough into golfball size pieces and feed them into the press. Dough needs to be at room temp also or it takes forever to get thru the press. Leftovers were even good eating. give it a try you wont be sorry
Works Like A Charm

My husband and I received this as a wedding present, as we had been to many restaurants where fresh pasta was used and we want to be able to recreate some of our favorite dishes. We still have some work to do at perfecting our art, but this attachment was fantastic and easy to use! Not having to roll out pasta dough our very first time, was also a bonus! The only complaint I have is that it can be a bit tedious to clean, but it was worth it for us!

It's too time consuming and after trying 3 times to make Fusilli I ended up twisting them by hand after cutting them loose.
Bottom Line No, I would not recommend this to a friend

The pasta ring broke the first time I used it, with a typical extruder pasta dough recipe. The plastic parts for this extruder are not sturdy enough for use with an extruder where heat and pressure work the pasta dough through the dies to form the pasta noodles. The components need to be made of metal such as stainless steel or aluminum. There is no customer support in Singapore to help bring in the replacement pasta ring (they don't know what I'm talking about even when I gave them the part no) and Kitchenaid in US can't help because I'm not in the US.

So far, I have only made spaghetti, but it tastes amazing! I also like knowing what's in my food, so the more I can make from scratch, the better!

Delicious, fresh pasta!

I've been working hard to cook the most fresh, whole food I can, using foods with a minimum of preservatives. I have recently begun making my own pasta sauce, so when this wonderful attachment for my mixer arrived I was thrilled! I had never made my own pasta so I went in search of a whole wheat recipe in an effort to be more healthy. The texture of the dough was such that the finished pasta was too dense to be enjoyable. Next, I tried the recipe in the pasta press handbook and it was divine! Great fresh pasta made quick and easy with fresh, whole ingredients. Following the instructions in the handbook are important for easy clean-up. This attachment is easy to use and to clean. No more store bought pasta for me!

What a cool thing-making pasta at home!!It was fun. The unit went on easy. I had no trouble with any thing, but cleaning it was just a tad hard. Nothing to prevent me from using it again and again.

I bought this 1 year ago. Recently I used a new recipe for pasta that was a little stickier and the auger broke. I called for a replacement and although they continue to sell this attachment for more than $150 they do not have a replacement. Not acceptable! I will not be purchasing any additional kitchen aid items. Their quality and customer service has obviously declined.
