This is an excellent quality wood cutting board with all the advantages and disadvantages of wood. I use it as a general prep surface for veggies and fruits. Although there is a groove on one side to catch meat drippings, I personally don't use it for poultry, simply because I think plastic is safer. I would use it for a roast or fish. It cleans up easily using "anywhere flat surface cleaner" by clorox or a dilute solution of vinegar and water. Both are safe to use on food prep surfaces. It could be refreshed with a light sanding if necessary and it has the beautiful appearance of wood, so it looks good if you want to leave it out on your counter top. The manufacturer, John Boos, makes mineral oil for treating and preserving the board. I use that as well.
