Edgecraft Chefs Choice Platinum Professional Sharpening Station - M130

I had to read the instructions several times. But the machine works just fine.

I took the ChefsChoice Sharpening Station out of the box, read the instructions, and within about 15 minutes had honed and sharpened all the knives (about 12) in my knife block. The results are amazing. You'll find your knives cutting through fruits and vegetables like butter. Just be careful when you're using your newly sharpened knives!

So I shopped around quite a bit before settling on this model. Overall, the experience has been quite positive. It does just what it claims. After reading the instructions, I managed to sharpen 6 knives in about 5 minutes, all of which are what I would call 'serviceably' sharp. It won't split a fly's behind in mid-air or anything, but it makes them sharp enough so that they are usable by the average home chef. To get them sharper, you would have to invest a lot of time and effort to develop skill with a whetstone, which I just wasn't willing to do. The one knock I have (which has been mentioned by others) is that the user's manual is not laid out in a very easy-to-read fashion. The print is fairly small, and there are not many illustrations or visual cues to provide guidance. Since understanding what order and what combination of the three slots is vital to getting the sharpest edge for each knife, I could not give it all five stars. Kudos to Chef's Choice on making a great product, but I think there is room for improvement with the manual. Given the level of complexity, I'd even suggest short-demonstration videos on the company web site. In this day and age, all that would be required would be a camcorder capable of MPEG encoding. In my opinion, well worth the price.
