Key Instructions:
1. FREEZE the freezing bowl overnight.
Cuisinart tells this in the instructions, but they also say you can freeze just until the contents don't shake and make noise. DO IT OVERNIGHT, Zero degrees F or less (-5 is even better)
2. CHILL your mix in refrigerator for 2 hours before starting to freeze.
This is not mentioned in the instructions, and it is critical because the sugar and flavorings are usually at room temp. After mixing milk, cream and room temp ingredients, your mix could be 38 degrees F, and the Cuisinart will waste cold and time just getting down to 32.
3. Extra Speed Tip:
Mix milk, flavoring and sugar and put it in the refrigerator for one hour.
If you are adding heavy whipping cream, you can put it in the freezer for the same hour (it won't freeze, but it gets colder)
Then add the cream to the chilled mix, put it in the frozen bowl and crank it on.
This is how to get pretty solid soft serve in 30 minutes.

I have had this unit for over 2 years. I would use it more often but I am not satisfied with the consistancy of the ice cream once the churning time is up. The dasher leaves a hard frozen ice cream around the walls and in the bottom of the bowl that is difficult to get off. I have to use a hard plastic spatula to chisel it out. While the interior of the bowl is not yet frozen to the soft ice cream consistency. This constitutes a mess when transferring the frozen ice cream to a container. I used to own an old fashion model that uses chipped ice and rock solt that produced superior ice cream.

I purchased this machine about a month ago and was having difficulties with the ice cream freezing hard enough, I called you and Cuisinart sent me a new bowl, it came within a week and the ice cream maker works far too good, as I can't stop making ice cream and trying new recipes! The only problem is......I am eating the ice cream lol Love this machine and makes perfect ice cream everytime, although I find it does take a little longer than 30 mins, it is still my favorite new toy!!!! I loved it so much I purchased my daughter one! Would love to purchase the ICE-100C but it is very expensive. :(

      Love this machine! I live the stainless steel tub vs the cheaper plastic version. Easy to use and results are just like store made ice cream and frozen yogurts. The key is always working with a cold tub and cold ingredients. I have substituted the heavy cream with organic arrowroot to add body but ip the taste is not superb. May not be worth saving the calories. I also use a sugar substitute like beet sugar which is very good to cut down the calories.

        Tried to make a sorbet. The mixture froze to the sides and the plastic blades would bend inward thus not scraping the froze mixture from the walls. The middle would become slush and no more.
        When making Icecream it did better but still froze to the sides.

            This product is awesome.. make your own ice cream, add ingredients you already have. Make healthy and sweet ice cream for your family. My kids love helping me make the ice cream. Fast and easy.. ready in 20mins.. I make the batch early in the morning, and by the time kids get home from school they have a delicious and healthy treat. This is a must buy... PS. We are saving so much money making our own.

                The machine is easy to use, quiet and easy to clean up. Always chill the mix and you will have excellent ice cream quickly. This is my fourth Cuisinart ice cream maker, all of the rest were the basic model. I selected this one for its capacity and appearance. I make at least one batch of ice cream weekly. I am an executive chef in a four diamond restaurant and this is for my personal use at home.
