Sous vide

Sous vide is a technique that slowly cooks vacuum-sealed foods in a water bath, bringing them to temperature gently to prevent overcooking and create incomparable texture. The technique that relies on a precise, temperature controlled circulator allows achieving perfect, repeatable results every time, which is ideal for delicate foods such as lobster or fish. Sous vide cooking is great for retaining vibrant flavor and texture in vegetables, and long cook times on secondary cuts of meat without drying them out.

          Takes a little more planning and time than traditional cooking but the results are well worth it. Portable take anywhere you can plug in and get a few gallons of water for sous vide excellence. Family cookouts just got interesting. Great for RV owners or small apartments no need for an outdoor grill. Negate the cooking smells and maximize the flavors. Great for fish or other fragrant foods. Finish with a little char from a torch flame, grill, or skillet for the perfect crust. Just vacuum pack your food for preparation. Spices and herbs go farther when packed in the bags. Hint cook up different seasoning in separate bags to satisfy your guests preferences. The wider window of serving time keeps those late arrivals with the same perfect results. Remove when ready to finish and serve.

            I couldn't be happier. I have been pondering taking the leap for over a year. Any Sous Vide appliance will be expensive and the PolyScience unit is near the top of the home unit price range. My experience, so far, is that the PolyScience unit works exactly as advertised and is a delight to use. I did have to adjust calibration .7C but that was simple to do and the adjustment sticks. Time will be the greatest test.

              You found this because you're researching sous vide and you're ready to take the plunge and buy an immersion circulator. Well, this is the one. The competing Sous Vide Supreme is very nice as well but this has much more granular temperature control and larger capacity, and is truly a commercial grade product that will allow you to cook dinner for two or twenty.As mentioned by other reviewers, sous vide is a bit tricky in that it can take a bit of experimenting to get the flavors right in the bag... the cooking time and temperature itself is quite simple. This is not a knock on this product, rather, an observation from one new sous vide chef to another.If you have the money to spend, this will be the first and last immersion circulator you buy, and you will never second guess if you should have bought one that was more expensive. If you can't quite afford it, maybe check [@] for a used circulator or buy the Sous Vide Supreme and upgrade sometime down the line. [@] is the only other authorized retailer of this product (aside from mfr. direct) but Abt has it in stock and gives the best service when you call to place the order. A win all around!

                  I spent a year researching Sous Vide in general and finally bought this unit this summer. I do not regret it at all! I have only made about a dozen recipes so far and can say meat and duck are the shining stars. The Fish needs some more fine tuning from my end. Oh, and the eggs have been terrific too. Be prepared to experiment a few times with each recipe - there are multiple opinions on time and temp out there. You have to decide for yourself after trying each one a couple times. I love this gadget !!!
