We followed a recipe given to us at Williams & Sonoma where we bought the 3-piece pasta roller & cutter set. The attachments were easy to install on our Kitchen Aid Pro 600 mixer, and with a little practice, we set about making 2-1/2 pounds of fettucine on our first try! Rave reviews by all six people at dinner. I even added some of the leftover noodles to my homemade chicken soup - it added just the right amount of bulk without weighing down the soup.Don't give up if the dough crackles up a bit on the first try through the roller. Just knead it a little, make it a bit smaller, and send it through on the #1 setting until it stays together. Then fold it in half, move the notch up by one, and send it through again. Continue until you reach the thickness you want. For us, #4 was perfect. I highly recommend these attachments to complete your Kitchen Aid experience!

I was so excited to finally own this attachment! This, being my number one attachment on my wish list, i was ecstatic when i actually did get it! I couldn't wait to bust it open and try that baby out! I got all the ingredients (Semolina was harder to find around here so it took a day or two) and made the dough. The dough came out fantastic and rolled perfectly with the pasta roller attachment. When it came time for the ravioli, i made sure to read all the instructions.. twice, to be sure i got it correct. Did as it said with the practice runs to "perfect the technique". I stuffed my raviolis with cheese, wanted to start out easy being the first time. The roller did not seal, not a SINGLE one. I was disappointed and tried a new technique. The second set did the same exact thing the filling was also bursting out of the unsealed pockets. I decided to re-read the instruction manual thinking that it was user error. Made a third set and turned out the same exact way. I mad sure that the pasta sheets were correctly placed on the rollers and made sure that it cover all the ends thinking that that was why my filling was leaking out and that they weren't sealing, that was not the problem. I was very disappointed. As i laid the unsealed, leaking, gooey pasta on the flour dusted wax paper to dry, it just turned into a large mush pile. I expected so much from this attachment and felt let down. I talked to a few friends and coworkers that have this same attachment and they all had the same problem, none of the raviolis sealed and ended up throwing them away. Sad that i wasted the time and ingredients for such a disaster. Hoping that kitchenaid finds the problem and fixes or comes up with a new/better attachment. I love all my kitchenaid products and I've never had any problems with any. I definitely wouldn't recommend this attachment. disappointed, to say the least.

Works exactly as it claims. We use the basic egg noodle recipe in the instruction manual and it makes perfect pasta every time!

Not worth the hassle

First KitchenAid attachment I have found to be a total waste. I wanted this to work and LOVE all of the other pasta attachments which work fantastic but the ravioli attachment is a lot of work and I end up with a mess each time I have tried to use. I also have ended up hand making ravioli each time I have attempted to use my attachment. Will continue to use other KitchenAid attachments for my mixer and recommend their products but save your money and time on this one!

Very Slick Attachment

Very slick and effient way to make ravioli. Each pocket is about 1.25"x1.25 square for filling. When you fold your dough sheet in half, be sure to give your fold a nice pinch to creat a sharp crease. Then adjust the ravioli stamp/rollers so your creased edge will be outter edge of your first row of ravioli pockets. This is the key to getting the ravioli to pass through the bottom of the press without bunching up. Smooth sailing after you master this starting step.
No way to repair the product
The spaghetti cutter got stucked with dought and i couldn't fix it. The answer from the company is to buy a new one because there is no repair when the warranty is due.

I love this attachment !!! For the last several years I've been using a hand crank roller/cutter. It worked fine but, it only left me with one hand to juggle the dough. Now I can use both hands to deal with the dough as it is rolled out. Once I have long sheets of flat dough I cut them to the length of noodles I want and run those sheets through the cutter. Easy peasy!

easy to use, good results
Used this pasta roller for the first time last week end. Used it to make sheets of pasta for Ravioli and for fettuccini. I used a past recipe from a book on artisan pasta. This did not include salt or olive oil. The second round I added salt and a little EVO and it rolled smoother. You need to stabilize the bowl on the mixer as it kneads the dough but it did just fine. It is important to run the pasta through the roller set on one until it is smooth and malleable. Initially the rollers shredded portions of the sheet, but after flouring the pasta and running it through 3-4 times it became smooth and easy to roll. Don't be discouraged if initial attempts to roll results in a shredded mess. Just fold it back together flour and run it through again and again till it is smooth. After the initial rolling it was a piece of cake to roll 6 inch by 3 foot sheets of pasta that we made into ravioli and fettuccini. Tasted great and clean up went smoothly
