    Knife Characteristics
    Wüsthof's Gourmet series of knives features a traditional styling that makes it the most popular of the Wüsthof lines. The hand-stamped and hand-honed blades are made from optimum quantities of high-carbon steel and a stain-resistant alloy, resulting in longer edge retention and easier resharpening. A computer-controlled grinding and polishing procedure ensures perfect tapering from bolster to tip for precision slicing. The weighted bolster gives the handle its heft and is considered a signature feature of Wüsthof knives. The fully visible tang on these knives is seamlessly encased in synthetic Hostaform-C handles, which are secured to the tang with three rivets.

    Special Features:

    High quality – There are distinct visible differences between the Wüsthof knife collections. However, since each and every knife is precision stamped from a single blank of high carbon/no stain steel, the "which is better?" question does not apply. Only the handle assemblies differ.

    Precision stamped, single piece construction – Provides maximum strength, safety, balance and heft. Precision forging means no stamping, no welding, no shortcuts. Just solid quality.

    High-carbon, no-stain steel with molybdenum – The Wüsthof-Trident formula, proudly etched on each and every blade, has evolved over the years as the optimum high carbon/stain resistant alloy for edge retention and resharpening. Will not rust or stain.

    What is Molybdenum? It takes a special kind of steel to allow Wüsthof-Trident to precision-grind its blades to such extremely fine tolerances. Think of molybdenum as the “egg” in Wüsthof’s steel batter. Acting as a bonding agent within the alloy, molybdenum gives steel flexibility without sacrificing its strength. The result: a less brittle steel that makes the Wüsthof-Trident knife an easier knife to sharpen and maintain over its lifetime.

    Handle Construction - Hostaform-C is an extremely durable, impact-resistant polypropylene that is dishwasher-safe* and virtually indestructible. It is both moisture- and food acid-resistant. Completely buffed and polished by hand. The seamless fit between handle, bolster and full-tang is totally hygienic.

    Material: The Steel

    WÜSTHOF knives are produced from only the finest of original, select materials.

    All knives of the CLASSIC, CULINAR and GRAND PRIX series are precision stamped from a single piece of high-carbon no-stain steel. It takes more than 40 major manufacturing steps from forging to tempering, grindling and polishing until the final cutting edge is applied. The formula X 50 Cr Mo 15 is proudly etched onto every blade. The analysis of the WÜSTHOF steel alloy is as follows:

    X = Surgical steel.
    50 = 0.5% carbon
    The carbon content is significant for the sharpness, edge retention and honing of the blade.
    It is indicated in 1/100 %.
    Cr = Chromium for no-stain properties.
    Mo = Molybdenum contributes to the no-stain properties
    15 = Contents of chromium in %

    Cleaning and Storage:

    With the proper care, one can contribute to the long life of a WÜSTHOF knife, and it is not difficult.

    The construction technique and the materials used to manufacture WÜSTHOF knives ensure that they are dishwasher safe. If you value your tools we recommend that, after each use, you wash your knives with warm water and a little detergent, rinse carefully and dry with a towel. Corrosive food particles will not affect your blade if washed off directly after use.

    The handy knife block provides protection for your blades as well as a visual compliment to your kitchen decor.
