Because - I can fill the water in the Sous Vide container, set the temp that is appropriate for my desired meat choice, plop it in and forget about it so I can play with my 2 lovely girls! When dinner time hits, just take it out, sear it and WHA LA!! Dinner is ready and it's perfectly juicy and tender! LOVE IT
