The possibilities are endless, which is why this holiday is so exciting. But before you set your sights on 2025, you have your New Year’s Eve party to take care of. NYE parties are typically the most spirited celebrations of any holiday. Between dancing, socializing and staying up ’til midnight, you, your friends and your family will need all of the energy you can get. Serve Up Some Festive Bites
The key to picking great food that everyone can enjoy at your New Year’s Eve party is to aim for a crowd-pleaser. Snacks like French fries, popcorn and chips and dip are typically safe choices for most guests (so long as there are no allergies or dietary restrictions to account for). Among the most beloved party fare, you’ll often find pizza. Why? Well, pizza is simple. Crust, sauce and cheese, that’s it. But outside of the most basic variation, pizza is also extremely versatile. There are tons of different toppings you can try out, a wide selection of veggies, meats and more. This ability to customize is what makes pizza a big hit at any party. While our appetizer recipe below isn’t pizza, it’s a twist on the classic Italian pie that’s bound to bring some holiday spirit to your party.
Today, we’re featuring another recipe from Chef Susan: a puff pastry wreath. This cheesy, doughy wreath can be easily pulled apart so every party guest can have a bite-sized portion. Feel free to jazz up this pastry any way you like to suit the tastes of you and your loved ones. - 2 sheets puff pastry, thawed
- ¾ cup fresh ricotta
- Salt, to taste
- 4 tbsp pesto
- 4 tbsp tomato basil sauce (or alternative pizza sauce)
- 1 cup shredded mozzarella
- 1 cup pepperoni (optional)
Egg Wash
- 1 egg
- 1 tbsp water
- Preheat your oven to 400°F and line a cookie sheet with parchment paper.
- Dust your cooking surface with flour and roll out one puff pastry sheet wide enough to fit a 12-inch diameter circle.
- Place a 12-inch plate on top of the pastry and cut around the edge with a pizza cutter. Scraps can be set aside for later use.
- Place your puff pastry onto the lined cookie sheet.
- Spread a thin layer of ricotta onto the puff pastry, leaving the edges untouched much like a pizza.
- Sprinkle the ricotta with salt (to your taste).
- On top of the ricotta, cover half of the pastry with pesto and the other half with tomato basil sauce.
- Sprinkle shredded mozzarella over both the pesto and tomato basil sides. If you're not cooking for vegetarian guests, add slices of pepperoni after the cheese (or any other pizza toppings you may enjoy). Put this puff pastry to the side.
- Sprinkle more flour onto your cooking surface, if needed. Roll out the second puff pastry sheet to the same size. Use your 12-inch plate and your pizza cutter to cut the pastry in a circle.
- Crack your egg and mix the contents with water in a small bowl.
- Using a basting brush, brush the empty edges of your first puff pastry with the egg wash.
- Gently pick up the second puff pastry and lay it on top of the puff pastry with the toppings. Press down the edges to fully seal both pastries.
- Place a standard-sized water glass upside down in the center of the pastry. By keeping this glass steady and in place, you will prevent the center of your pastry from moving or tearing.
- Use your pizza cutter to cut 16 wedges into the puff pastry. The easiest way to do this is to cut in quarters first, and then cut those quarters in half. Do not cut all the way to the center. Instead, stop the cutter once you reach the rim of the glass. These cuts should closely resemble the way one cuts a classic pizza.
- Grab two pastry wedges by the edges and twist them toward each other three times. Then, press the edges of the wedges together to seal them. Repeat this until every wedge is twisted and your pastry looks like a wreath or a sun.
- Bake for 20-30 minutes until the wreath is golden brown.
