Queso Blanco Nachos For The Big Game!

The big game is coming up in just a few weeks, and we're getting excited. That being said, no sports event is complete without the perfect snacks, like nachos. That's why we've put together a great white queso beef nachos recipe. And it's all thanks to our own in-house chef Susan Swanson. And don't worry, it isn't her last recipe before the game starts. We'll be bringing you heartier bites before the big Sunday spectacular. Keep in mind that the beef in this nacho recipe can be easily replaced for another protein, all for an appetizer that everyone can enjoy. Yields 8 Servings

White Queso

  • 1 lb. white American cheese, cut into cubes
  • 2/3 cup milk
  • 1/2 cup water
  • 4 oz. can diced green chiles
  • 2 pickled jalapenos
  • 1 oz. pickled jalapeno juice from jar

Taco Meat

  • 1 lb. ground beef
  • 1 tbsp chili powder
  • 1/2 tsp salt
  • 2 tsp cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder or granulated garlic
  • 1/2 tsp onion powder
  • 1/2 cup tomato sauce

Nachos & Toppings

  • 16 oz. cheese block of your choice, shredded
  • 2 avocados, diced
  • 1 can refried beans
  • Small can black olives
  • Sour cream, to taste
  • Pico de gallo, to taste
  • Canned sliced jalapenos OR diced fresh jalapenos, to taste
  • 1 bag restaurant-style tortilla chips

Queso Blanco Nachos

  1. Combine cheese cubes and milk along with optional water in a large glass microwave-safe bowl.
  2. Microwave on high for five minutes, stirring every minute. Remove from microwave and stir in remaining ingredients.
  3. Cook ground beef in a saute pan until there is no more pink. Drain grease, add spices and tomato sauce and coat. Simmer for 5 mins.
  4. Line a sheet tray with foil and set aside.
  5. Preheat oven to 350 degrees Fahrenheit.
  6. Line the sheet tray with a layer of tortilla chips. Then, layer refried beans, taco meat, pico de gallo, olives, jalapenos and then the shredded cheese. Continue with a second layer if there is room.
  7. Bake in oven until cheese is fully melted and bubbly.
  8. Remove from oven and drizzle with white queso. Top with avocado and sour cream.
