Vitamix's Roasted Red Pepper Soup Recipe

  • 2 cups roasted red peppers
  • 3 cups vegetable or chicken stock
  • ¼ cup cashews
  • 1 cup fresh basil leaves
  • ½ teaspoon black peppercorns

Optional

  • A sprinkle of crushed red pepper flakes
  • Feta cheese
  1. Put all of your ingredients into the container of the Vitamix Ascent X4 and secure the lid.
  2. Turn on your blender starting with the lowest speed option, and then quickly increase it to the highest speed option.
  3. Select the Hot Soup blender program and let it run/blend for about six minutes.
  4. Pour your soup blend into a pot and heat it to your temperature preference on a cooktop. Garnish your soup with a sprinkle of feta cheese and/or crushed red pepper flakes (optional).
