Weber Griddle Chopped Cheese Recipe

We teamed up with Weber to share some of their best recipes; this chopped cheese is perfect for your Weber griddle, makes enough food for a small group and comes together quickly. Weber Griddle Chopped Cheese

  • 2 lb. ground beef (85/15)
  • 2 cups chopped onions and peppers
  • 10 slices American cheese
  • 1 tbsp. Lawry's seasoned salt
  • Butter
  • Spicy mayonnaise
  • French rolls (Weber suggests Turano)
  • Avocado oil
  1. Fire up your Weber griddle to medium heat and season with avocado oil (or another oil with a high smoke point).
  2. Place the Weber Butter Roller on the griddle so the butter melts for your bread.
  3. Saute the onions and pepper with 1 tbsp. butter, leaving the griddle on low. Add meat to the griddle.
  4. Once sauteed, press the meat into 1" thickness.
  5. Flip the meat to season both sides of 1 tbsp. seasoning, cooking on the griddle until cooked halfway through and charred, then flipping to cook the other side.
  6. Once the meat is thoroughly cooked, add in the sauteed veggies and begin chopping.
  7. Add the cheese slices all over the meat and vegetable mixture, bringing the ingredients together until the cheese melts into the mixture.
  8. Add another layer of cheese to make it extra cheesy, if desired.
  9. Remove the chopped cheese mixture from the griddle, place in a drip pan and cover it with foil to keep warm.
  10. Use the butter roller to roll melted butter onto the inside of the French rolls, then spread spicy mayo over both sides of the bread.
  11. Place the buttered side of the rolls face down on the griddle and brown them until the bread is crispy.
  12. Add chopped cheese mixture to the toasted rolls, serve and enjoy!
