The Sous Vide Needle Probe. An advanced feature of the HydroPro™ Plus that monitors core temperature, enabling delta cooking and data logging.

When delta cooking, the water bath temperature of the HydroPro™ Plus is set higher than your desired final core temperature. This technique can be used to shorten cook times and introduce textural contrast. For most foods, we recommend setting your bath temperature 2° higher than desired final core temperature. This can reduce cook times by up to 50%.

When using the probe, you can add a target temperature alarm and a holding time for either pasteurization or tenderness. To use the probe, apply a piece of Sous Vide tape to the exterior of the bag before cooking.
