Celebrate Austrian Days with Recipes from Jolane's Chef Jose Guerrero
Chicagoland has more than 40,000 residents of Austrian descent and has been called the most Austrian city outside of Austria itself (See history of Austrians in Chicago). Two important days for Chicagoans of Austrian descent are approaching. Austrian American Day is September 26 and Austrian National Day is October 26.
Celebrate these important Austrian days at Jolane's Restaurant and Bar located in Glenview. Jolane's offers American cuisine with an Austrian flare. The restaurant was named after the Jolane (Jewel) Abt, whose $800 opened Abt Electronics with her husband Dave back in 1936. Jewel was an Austrian immigrant with an independent spirit, a savvy business woman and a dedicated wife and mother who always made sure a homemade meal was on the table every night. The delicious home-style cooking served at Jolane's is a tribute to the memory of the Abt family matriarch.

Jose Guerrero - Chef at Jolane's Restaurant & Bar
Jose has been with Jolane's since 2009 and has watched it grow into the restaurant and bar it is today. He has been instrumental in the design and expansion of its menus. His passion for cooking began as a child and flourished during his study at a culinary arts school. Since then, Jose learned to develop his own unique style and flair, which can be seen in Jolane's specials menus.

Beef Tenderloin Spaetzle
- 6 oz diced beef tenderloin
- 4 oz spaetzle
- 3 oz Demi glaze
- 2 oz 3 cheese mozzarella asiago Parmesan
- 1 oz caramelized onion
- Garnished with crispy fried onions and chives
- Cut Beef tenderloin into a large dice
- Cut one large Spanish onion, julienne
- In a 10 in sauté pan caramelize onion
- In 4 qt. pot boil 3qts of water
- In a sauce pan boil 2 cups of water add ½ cup demi paste set aside
- On medium heat, heat up a 10 in pan preferably iron. Sear beef tenderloin when seared all around add caramelized onions sauté for about 45 seconds
- While your sautéing cook ¾ cup of spaetzle in boiling water for about 1 minute
- Add the demi to the tenderloin and onions then add the spaetzle.
- Add ¼ cup of 3 cheese
- With a wooden spoon mix everything together
- Plate and garnish with chive or parsley
